With all the hustle and bustle of daily life, we don’t always eat right, and this presents health problems later on. While they may be cheaper than buying say, skinless, boneless chicken breasts, buying a whole chicken has a lot of portions that aren’t good for you, plus there is the skin, which is high in fat content. Instead of frying chicken in a bunch of oil, bake it instead. It isn’t hard to do, and you can pretty much get the same results at you would by frying it.
One of the best cooking light recipes is this. Take four large skinless, boneless chicken breasts. You can find many nice portions either fresh or frozen. If they are large breasts, cut them in half in the middle. You can use an egg mixture to coat the chicken on both sides, and you don’t have to use milk. There are many canisters of bread crumbs available, or you can use cracker crumbs around the house. Add some pepper, non salt seasonings like oregano, thyme, and a little garlic to the crumbs. Instead of using some kind of shaking container to coat the chicken lay the crumbs out on a shallow plate and put the pieces of chicken on that, turning to evenly coat.
You are going to need a baking pan, one that has a tray that lifts the chicken off of the surface of the pan. Preheat the oven to four hundred degrees. Now lay each piece of coated chicken out on the tray. Once you have all four or eight pieces laid out, put it in the oven on the middle rack. Cook for 30 minutes, turning once after fifteen minutes. If you like the coating a little crispier, broil for a few minutes longer once the cooking time is done. You will find that not only does your chicken come out better than frying, its stays juicy on the inside, and the extra fat drops into the pan itself, not on your chicken.
As mentioned earlier, there are many different cooking light recipes you can do at home, and healthy food recipes don’t have to come out of a book. Cook smarter, think out of the box. Another good example for healthy cooking involves potatoes. Instead of buying frozen french fries that are full of preservatives, make your own. You can take four medium sized potatoes or more if you have a larger family. Wash them and cut lengthwise in half, then make wedges. The more wedges, the less cooking time. Place them skin side down on a lightly coated cookie sheet, add your favorite seasonings but no salt. Bake at 400 degrees for about 35 to 40 minutes, checking them about half way.
